8 oz (225g) fettuccine or your preferred pasta

2 tbsp olive oil

1 medium onion, finely diced

3 cloves garlic, minced

8 oz (225g) mushrooms, sliced (cremini or button recommended)

4 cups fresh spinach, tightly packed

1 cup heavy cream

1/2 cup freshly grated Parmesan cheese

1/4 tsp red pepper flakes (adjust to your spice preference)

Salt and black pepper, to taste

Fresh basil leaves, for garnish

Zest of 1 lemon (optional, for a bright finish)

Cook the Pasta: Bring a large pot of salted water to a boil. Add fettuccine and cook according to the package instructions until tender but al dente. Before draining, reserve about 1 cup of the pasta cooking water, then drain the remaining water and set the pasta aside.

    Sauté the Aromatics: In a large skillet over medium heat, pour in the olive oil. Add the diced onion and sauté for 3-4 minutes until it turns translucent and soft. Stir in the minced garlic and continue to cook for an additional minute, allowing the garlic to become fragrant.

      Add the Mushrooms: Introduce the sliced mushrooms to the skillet. Sprinkle with a pinch of salt and black pepper. Sauté for about 5-7 minutes, stirring frequently, until the mushrooms have released their moisture and turned a lovely golden brown.
