1 medium spaghetti squash

1 cup ricotta cheese

1 cup shredded mozzarella cheese (divided)

1 cup fresh spinach, chopped

1/2 cup grated Parmesan cheese

2 cloves garlic, minced

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (optional for heat)

Salt and pepper to taste

2 tablespoons olive oil

Fresh basil for garnish (optional)

Preheat the Oven: Begin by preheating your oven to 400°F (200°C).

    Prepare the Spaghetti Squash: Carefully cut the spaghetti squash in half lengthwise. Use a spoon to scoop out the seeds and discard them. Drizzle the inside of each half with olive oil and season generously with salt and pepper. Place the halves cut-side down on a baking sheet lined with parchment paper, which will prevent sticking and make for easier cleanup.

      Roast the Squash: Bake the squash in the preheated oven for about 35-40 minutes, or until it's fork-tender and the flesh shreds easily into strands. Once done, take it out of the oven and allow it to cool for a few minutes. Using a fork, gently scrape the insides to create spaghetti-like strands.

        Prepare the Filling: In a large mixing bowl, combine the scraped spaghetti squash strands with ricotta cheese, half of the shredded mozzarella cheese, chopped spinach, grated Parmesan cheese, minced garlic, Italian seasoning, and optional red pepper flakes. Stir well until all ingredients are completely incorporated. Taste and adjust the seasoning with additional salt and pepper if needed.

          Assemble the Bake: Transfer the mixed filling into a greased baking dish, spreading it out evenly to create a flat layer. Sprinkle the remaining mozzarella cheese over the top for a melty finish.
