12 ounces penne pasta

3 large red bell peppers

2 tablespoons olive oil, divided

1 small onion, finely chopped

4 cloves garlic, minced

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

Fresh basil leaves, for garnish

Roast the Peppers: Begin by preheating your oven to 450°F (230°C). Halve the red bell peppers, remove their seeds, and place each half cut-side down on a baking sheet lined with parchment paper. Drizzle 1 tablespoon of olive oil over the peppers. Roast them in the oven for about 20 minutes, or until the skins become charred and blistered. After roasting, take them out and allow them to cool slightly. Once cooled, peel off the charred skin and chop the peppers into bite-sized pieces.

    Cook the Pasta: In the meantime, bring a large pot of salted water to a rolling boil. Add the penne pasta and cook according to package instructions until it reaches an al dente texture. After cooking, drain the pasta but be sure to reserve about 1/2 cup of the pasta water for later.

      Prepare the Sauce: In a large skillet over medium heat, pour in the remaining tablespoon of olive oil. Add the finely chopped onion and sauté it for about 5–7 minutes, or until it becomes soft and translucent. Then, incorporate the minced garlic and continue to cook for an additional minute, allowing the garlic to become fragrant.

        Add Cream and Peppers: Stir in the chopped roasted peppers along with the heavy cream, grated Parmesan cheese, dried oregano, salt, and black pepper. Let the sauce simmer for around 5 minutes, allowing it to thicken slightly. If the sauce appears too thick, gradually add some of the reserved pasta water until you achieve your desired consistency.

          Combine: Add the cooked penne pasta directly into the skillet with the sauce. Toss the pasta gently to ensure that it is evenly coated with the creamy sauce. Allow it to cook for an additional 2–3 minutes until everything is heated through.

            Serve: Plate the creamy roasted bell pepper penne, and for the finishing touch, garnish each serving with fresh basil leaves. If you like, sprinkle some extra Parmesan cheese on top for added flavor.
