8 oz rotini pasta

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 red bell pepper, chopped

1/2 cup red onion, finely chopped

1 cup frozen peas, thawed

1/2 cup cooked and crumbled bacon (optional)

1 cup shredded cheddar cheese

1/2 cup mayonnaise

1/2 cup sour cream

1 packet (1 oz) ranch seasoning mix

1 tablespoon apple cider vinegar

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Cook the Pasta: In a large pot, bring salted water to a rolling boil. Add the rotini pasta and cook according to the package instructions until al dente. Drain the pasta and rinse thoroughly under cold water to quickly cool it and halt the cooking process. Set the pasta aside to fully cool.

    Prepare the Vegetables: While waiting for the pasta to cook, chop the cherry tomatoes, cucumber, red bell pepper, and finely dice the red onion. In a large mixing bowl, combine the chopped vegetables with the thawed peas to create a colorful base for the salad.
