Ingredients

1 cup pumpkin puree (canned or fresh)

1 cup heavy cream

½ cup grated Parmesan cheese

2 tablespoons unsalted butter

2 cloves garlic, minced

½ teaspoon ground nutmeg

½ teaspoon ground cinnamon

Salt and freshly cracked black pepper to taste

12 ounces fettuccine or your pasta of choice

Fresh parsley or sage, chopped (for garnishing)

Instructions

Cook the Pasta:

In a large pot, bring a generous amount of salted water to a rolling boil. Add the fettuccine and cook according to the package instructions until al dente. Before draining, reserve ½ cup of the pasta cooking water. Once drained, set the pasta aside.

      Prepare the Alfredo Sauce:

In a large skillet, melt the unsalted butter over medium heat. Once the butter has melted, add the minced garlic. Sauté for about 1 minute, stirring frequently, until the garlic is fragrant, taking care not to let it burn.

          Integrate Pumpkin and Cream:

Add the pumpkin puree to the skillet, followed by the heavy cream. Stir thoroughly to combine the ingredients. Cook gently until the mixture is well heated and uniform in texture.

              Incorporate Seasonings:

Gradually add the grated Parmesan cheese, ground nutmeg, and ground cinnamon to the skillet. Stir continuously until the cheese has melted and the sauce is creamy. If the sauce becomes too thick, gradually add the reserved pasta water, a little at a time, until you've reached your preferred consistency.

                  Adjust Seasonings:

Taste the sauce and season it with salt and freshly cracked black pepper to your liking. Feel free to adjust the spices; add a sprinkle more of nutmeg or cinnamon for a more pronounced flavor if desired.

                      Combine Pasta and Sauce:

Carefully add the drained fettuccine to the skillet with the creamy pumpkin sauce. Toss the pasta until it is evenly coated in the sauce, continuing to cook for an additional minute or two so the pasta can absorb some of the flavors.

                          Serve and Garnish:

Plate the creamy pumpkin Alfredo in shallow bowls. Garnish with freshly chopped parsley or sage for a vibrant touch. Serve immediately and indulge in this cozy, fall-inspired dish!
