Ingredients

1 lb (450g) potato gnocchi

2 cups fresh baby spinach, roughly chopped

1 cup heavy cream

1/2 cup basil pesto (store-bought or homemade)

1/4 cup grated Parmesan cheese, plus additional for serving

2 tablespoons olive oil

2 cloves garlic, finely minced

Salt and freshly ground black pepper to taste

1/4 teaspoon red pepper flakes (optional for a kick)

Toasted pine nuts or walnuts, for garnish (optional)

Instructions

Cook the Gnocchi: Bring a large pot of salted water to a rolling boil. Add the gnocchi and cook according to the package instructions, typically around 2-3 minutes, or until they rise to the surface indicating they are done. Drain the gnocchi well and set aside.

Sauté the Garlic: In a large skillet, heat the olive oil over medium heat. Once hot, add the minced garlic and sauté for approximately 1 minute, stirring constantly until it becomes fragrant but is not browned.

Incorporate the Spinach: Add the chopped spinach to the skillet and cook for an additional 2-3 minutes, stirring occasionally, until the spinach has wilted and is tender.

Prepare the Creamy Sauce: Reduce the heat to low and pour in the heavy cream. Carefully stir in the basil pesto and grated Parmesan cheese, mixing until well combined. Allow the sauce to simmer gently for about 3-5 minutes, stirring occasionally, until it thickens slightly.

Mix in the Gnocchi: Gently fold the cooked gnocchi into the creamy pesto sauce, ensuring each piece is well-coated. Taste and season the dish with salt, freshly ground black pepper, and red pepper flakes if desired.

Plate and Serve: Remove the skillet from heat. Serve the gnocchi immediately, garnished with extra grated Parmesan cheese and a sprinkle of toasted pine nuts or walnuts for added texture and flavor, if you like.

              Prep Time: 10 minutes | Total Time: 25 minutes | Servings: 4

                - Presentation Tips: For an elegant touch, serve the dish in shallow bowls, drizzling a bit more pesto around the edge and topping with a few extra pine nuts or walnuts for visual appeal.
