Creamy Pesto Chicken Lasagna

9 lasagna noodles (no-boil preferred for ease)

2 cups cooked chicken, shredded

1 cup ricotta cheese

2 cups mozzarella cheese, shredded, divided

1 cup Parmesan cheese, grated, divided

1 cup pesto sauce (store-bought or homemade)

2 cups fresh spinach, roughly chopped or sautéed

1 cup heavy cream

1 teaspoon garlic powder

1 teaspoon Italian seasoning

Salt and pepper, to taste

Olive oil, for drizzling (optional)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 375°F (190°C), allowing it to reach the optimal baking temperature while you prepare the lasagna.

    Prepare the Chicken Mixture: In a large mixing bowl, combine the shredded chicken, ricotta cheese, half of the shredded mozzarella cheese, half of the grated Parmesan cheese, pesto sauce, garlic powder, Italian seasoning, and a generous pinch of salt and pepper. Use a fork or spatula to mix all the ingredients thoroughly until they are well combined.

      Assemble the Lasagna: In a greased 9x13 inch baking dish, pour and spread 1/3 of the heavy cream evenly across the bottom. Lay 3 lasagna noodles over the cream to create the first layer. Spoon half of the chicken mixture over the noodles and spread it evenly. Next, add half of the chopped spinach, and drizzle another 1/3 of the heavy cream on top.

        Repeat Layers: Proceed with another layer by placing 3 more noodles over the previous layer. Add the remaining chicken mixture and the rest of the spinach. Top this with another 1/3 of the heavy cream before finishing with the final 3 noodles. Pour the remaining heavy cream over this last layer and sprinkle the remaining mozzarella and Parmesan cheeses evenly on top.

          Bake the Lasagna: Cover the baking dish with aluminum foil, ensuring it does not touch the cheese. Bake in the preheated oven for 25 minutes. After 25 minutes, carefully remove the foil and continue baking for an additional 15-20 minutes, or until the cheese is bubbly and presents a golden brown finish.
