8 oz (225g) pasta (fettuccine or penne recommended)

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

8 oz (225g) mushrooms, sliced (cremini or button mushrooms work well)

5 oz (140g) fresh spinach

1 cup (240ml) heavy cream

1/2 cup (50g) grated Parmesan cheese

Salt and pepper to taste

1 teaspoon Italian seasoning

Fresh basil leaves for garnish (optional)

Cook the Pasta: In a large pot, bring salted water to a rapid boil. Add the pasta of your choice and cook according to the package instructions until al dente. Before draining, reserve 1/2 cup of the pasta water for later. Drain the pasta and set it aside.

    Sauté Aromatics: Heat the olive oil in a large skillet over medium heat. Add the finely chopped onion and sauté for about 2-3 minutes until it becomes soft and translucent. Add the minced garlic and continue cooking for another minute, until the garlic is fragrant.

      Add Mushrooms: Incorporate the sliced mushrooms into the skillet. Sauté them for approximately 5-7 minutes, stirring occasionally, until they are tender and golden brown.

        Incorporate Spinach: Add the fresh spinach to the skillet, folding it in gently. Cook for an additional 2 minutes, or until the spinach has wilted down.

          Make the Sauce: Pour the heavy cream into the skillet, stirring well to combine it with the sautéed vegetables. Next, add the grated Parmesan cheese, Italian seasoning, and season with salt and pepper. Allow the sauce to simmer for about 3-4 minutes, stirring occasionally, until it thickens slightly. If the sauce becomes too thick, gradually stir in the reserved pasta water until you reach your preferred consistency.
