16 oz mushrooms, sliced (cremini or button)

10 oz fresh spinach (or 1 package frozen, thawed and drained)

15 oz ricotta cheese

3 cups shredded mozzarella cheese (divided)

1 cup grated Parmesan cheese (divided)

4 cloves garlic, minced

1 medium onion, diced

2 tablespoons olive oil

2 tablespoons butter

2 tablespoons all-purpose flour

2 cups milk (whole or 2%)

1/4 teaspoon freshly grated nutmeg (if available)

Salt, to taste

Black pepper, to taste

1 teaspoon Italian seasoning

Fresh basil, for garnish (optional)

Preheat the Oven: Begin by preheating your oven to 375°F (190°C).

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Once hot, add the diced onion and sauté until it becomes soft and translucent, approximately 3-4 minutes. Then, stir in the minced garlic and cook for an additional 1-2 minutes, until aromatic.

      Cook the Mushrooms: Incorporate the sliced mushrooms into the skillet. Cook them until they have released their moisture and have turned golden brown, about 7-10 minutes. Season with salt, black pepper, and Italian seasoning. Finally, add the fresh spinach and cook until fully wilted. Remove from heat and set the mixture aside.

        Prepare the Cream Sauce: In a medium saucepan over medium heat, melt the butter. Once melted, whisk in the flour, cooking for about 1 minute until bubbling. Gradually pour in the milk, whisking continuously until the mixture thickens and reaches a gentle boil. Stir in the freshly grated nutmeg, and season with salt and pepper to taste. Once done, remove the saucepan from heat and set aside.

          Combine the Cheeses: In a mixing bowl, combine the ricotta cheese, 1 cup of shredded mozzarella, and 1/2 cup of grated Parmesan. Mix thoroughly and season with a pinch of salt and pepper.

            Layer the Lasagna:

              - Start by spreading a thin layer of the cream sauce at the bottom of a 9x13 inch baking dish.

                - Lay down 4 lasagna noodles over the sauce.

                    - Pour one-third of the cream sauce on top and sprinkle with 1/2 cup of mozzarella.

                      - Repeat the layering process (noodles, ricotta mixture, mushroom-spinach mixture, cream sauce, mozzarella) until all ingredients are utilized. Finish with a final layer of noodles, topped with the remaining cream sauce, followed by the rest of the mozzarella and Parmesan cheese.

                        Bake the Lasagna: Cover the dish with aluminum foil (consider spraying the foil with cooking spray to prevent sticking). Bake for 25 minutes. Afterward, remove the foil and continue to bake for an additional 15-20 minutes, or until the top is bubbly and has turned golden brown.
