1 sheet of puff pastry (thawed if frozen)

2 cups of mixed mushrooms (shiitake, cremini, and button), sliced

2 tablespoons of olive oil

1 medium onion, finely chopped

2 cloves of garlic, minced

1 teaspoon of fresh thyme leaves (or ½ teaspoon dried thyme)

1 teaspoon of fresh rosemary, chopped (or ½ teaspoon dried rosemary)

Salt and pepper to taste

4 ounces of goat cheese, crumbled

½ cup of heavy cream

1 large egg

1 tablespoon of Dijon mustard

Fresh parsley, chopped (for garnish)

Preheat the Oven: Start by preheating your oven to 400°F (200°C) to ensure it’s hot and ready for baking.

    Prepare the Puff Pastry: On a lightly floured surface, unroll the puff pastry. Using a rolling pin, roll it out to a thickness of approximately 1/8 inch for an even texture. Cut the pastry into 4 equal squares or rounds, depending on the shape you prefer, and arrange them on a baking sheet lined with parchment paper.

      Cook the Aromatics: In a large skillet, heat the olive oil over medium heat. Once hot, add the finely chopped onion and sauté for about 3-4 minutes, stirring occasionally, until the onion becomes translucent. Add the minced garlic, fresh thyme, and rosemary to the skillet, cooking for an additional minute until the mixture is fragrant.

        Sauté the Mushrooms: Incorporate the sliced mushrooms into the skillet with the cooked onions and garlic. Season the mixture with salt and pepper to taste.
