1 cup orzo pasta

2 tablespoons olive oil

1 small onion, finely chopped

4 cups vegetable broth (or chicken broth)

1 cup heavy cream

1 cup grated Parmesan cheese

Zest of 1 lemon

Juice of 1 lemon

Cook the Orzo: In a medium pot, bring the vegetable or chicken broth to a rolling boil. Add the orzo pasta and cook according to the package instructions until al dente. Once cooked, drain the orzo, reserving about 1/2 cup of the broth for later use, and set the orzo aside.
