Ingredients

2 boneless, skinless chicken breasts

1 cup broccoli florets

1 cup assorted bell peppers, sliced (red, yellow, and green for color)

1 medium carrot, julienned

4 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth (low-sodium preferred)

2 tablespoons olive oil

1 tablespoon butter

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Grated Parmesan cheese, for garnish (optional)

Instructions

Prep the Chicken: Start by seasoning both sides of the chicken breasts generously with salt, pepper, dried thyme, and paprika. Make sure the spices cover the chicken evenly for optimal flavor.

Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat until shimmering. Carefully add the seasoned chicken breasts to the pan, searing them for about 6-7 minutes on each side. The chicken should be golden brown and cooked through. Once done, remove the chicken from the skillet and set it aside on a plate.

Sauté the Vegetables: In the same skillet, reduce the heat to medium and add the butter. Once melted and bubbly, add the minced garlic first, sautéing it for about 30 seconds until fragrant. Next, add the broccoli florets, sliced bell peppers, and julienned carrot, stirring everything together. Sauté for 4-5 minutes until the vegetables are just tender but still vibrant.

Make the Creamy Sauce: Pour in the chicken broth, stirring to deglaze the pan, scraping up any flavorful bits from the bottom. Allow the broth to simmer for 2-3 minutes. Afterward, slowly add the heavy cream, stirring continuously until fully combined. Continue cooking for an additional 5 minutes, allowing the sauce to thicken slightly.

Combine and Cook: Nestle the seared chicken breasts back into the skillet, spooning the creamy sauce and vegetables over them. Let everything simmer together for an additional 3-4 minutes to allow the flavors to meld beautifully.

Garnish and Serve: Once finished, remove the skillet from heat. Garnish your dish with freshly chopped parsley and sprinkle with grated Parmesan cheese, if desired. Serve immediately for a delightful meal.
