Ingredients

1 tablespoon olive oil

1 medium onion, finely chopped

2 cloves garlic, minced

2 medium carrots, diced

2 celery stalks, diced

4 cups low-sodium chicken or vegetable broth

1 cup heavy cream

1 teaspoon dried thyme

1 teaspoon smoked paprika

½ teaspoon freshly ground black pepper

Salt to taste

1 cup assorted cheeses (e.g., Brie, gouda, aged cheddar), cut into bite-sized cubes

1 cup assorted cured meats (e.g., salami, prosciutto, chorizo), chopped into small pieces

1 cup pickled vegetables (e.g., gherkins, pickled onions) for garnish

Fresh herbs (e.g., parsley or chives), finely chopped for garnish

Crusty bread or crostini, for serving alongside

Instructions

In a large pot, heat the olive oil over medium heat. Once hot, add the finely chopped onion and sauté for about 5 minutes or until it becomes translucent and fragrant.

Add the minced garlic, diced carrots, and diced celery to the pot. Continue to sauté the mixture for an additional 5-7 minutes, stirring occasionally, until the vegetables are tender and well combined.

Pour in the chicken or vegetable broth, stirring gently to combine. Increase the heat to bring the mixture to a rolling boil. Once boiling, reduce the heat to medium-low and let it simmer for 15 minutes, allowing the flavors to meld beautifully.

After simmering, stir in the heavy cream, dried thyme, smoked paprika, black pepper, and salt to taste. Mix well to ensure all the ingredients are incorporated.

Gradually add the assorted cheeses to the pot, stirring gently until they melt completely and the soup becomes creamy and smooth. Allow the soup to simmer for an additional 5 minutes, making sure it does not come to a boil.

Remove the pot from heat and fold in the chopped cured meats, enhancing the soup with their rich flavors.

To serve, ladle the creamy soup into individual bowls. Top each bowl with a generous portion of pickled vegetables and a sprinkle of finely chopped fresh herbs. Pair the soup with slices of crusty bread or crispy crostini for that complete charcuterie experience.
