Ingredients

8 oz penne pasta

1 lb large shrimp, peeled and deveined

2 tbsp Cajun seasoning

2 tbsp olive oil

4 cloves garlic, minced

1 medium onion, diced

1 red bell pepper, sliced thinly

1 cup heavy cream

1 cup chicken broth

1 cup cherry tomatoes, halved

1/2 cup grated Parmesan cheese

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Cook the Pasta: In a large pot, bring salted water to a rolling boil. Add the penne pasta and cook it according to the package instructions until it reaches an al dente texture. Drain the pasta, reserving a little pasta water if desired, and set it aside.

Season the Shrimp: In a medium-sized mixing bowl, add the peeled and deveined shrimp. Sprinkle the Cajun seasoning over the shrimp and toss until they are evenly coated with the spice mix.

Sauté the Aromatics: Heat the olive oil in a large skillet over medium-high heat. When the oil is shimmering, add the minced garlic and diced onion. Sauté for approximately 2-3 minutes, stirring frequently, until the onion becomes soft and translucent, and the garlic is fragrant.

Cook the Shrimp: Add the seasoned shrimp to the skillet. Cook for about 3-4 minutes, or until the shrimp turn pink and opaque, stirring occasionally for even cooking. Once cooked, remove the shrimp from the skillet and set them aside on a plate.

Prepare the Sauce: In the same skillet, add the sliced red bell pepper. Sauté for 2 minutes until slightly tender. Next, pour in the chicken broth and bring the mixture to a gentle simmer. Allow the broth to reduce slightly for about 3-5 minutes, concentrating its flavors.

Add the Cream: Reduce the heat to low and gradually stir in the heavy cream. Then add the halved cherry tomatoes, stirring gently. Allow the sauce to simmer for about 5 minutes, letting it thicken.

Combine: Return the cooked shrimp to the skillet, followed by the drained penne pasta. Gently toss everything together to ensure the pasta and shrimp are well coated in the creamy sauce. Stir in the grated Parmesan cheese until it melts and integrates into the sauce. Taste and season with additional salt and pepper as needed.

Serve: Plate the creamy Cajun shrimp penne into individual serving dishes. Garnish each plate with freshly chopped parsley and an extra sprinkle of Parmesan cheese if desired.
