1 lb large shrimp, peeled and deveined

2 tablespoons olive oil, divided

1 small onion, finely diced

4 cloves garlic, minced

½ teaspoon smoked paprika

1 cup heavy cream

½ cup chicken broth

½ cup grated Parmesan cheese

Salt and black pepper, to taste

2 green onions, sliced (for garnish)

Fresh parsley, chopped (for garnish)

Cook the Pasta: In a large pot, bring a generous amount of salted water to a rolling boil. Add the fettuccine and cook according to the package directions until al dente, typically about 8-10 minutes. Once cooked, drain the pasta and set aside, reserving ½ cup of the starchy pasta water for later use.

    Sauté the Shrimp: In a large skillet over medium heat, add 1 tablespoon of olive oil and let it heat up. Once the oil is shimmering, add the shrimp, seasoning them with Cajun seasoning and smoked paprika. Sauté the shrimp for 2-3 minutes, or until they have turned pink and opaque.
