Ingredients

8 oz fettuccine pasta

2 cups fresh broccoli florets

4 tablespoons unsalted butter

2 cloves garlic, minced

1 cup heavy cream

1 cup freshly grated Parmesan cheese

Salt and freshly cracked black pepper, to taste

1/4 teaspoon ground nutmeg (optional)

1/4 cup fresh parsley, finely chopped, for garnish

Extra Parmesan cheese, for serving

Instructions

Cook the Pasta and Broccoli:

Begin by bringing a large pot of salted water to a rolling boil. Add the fettuccine and cook according to the package instructions until it is al dente, typically around 8-10 minutes. In the final 3 minutes of cooking, carefully add the fresh broccoli florets to the pot. Once the pasta and broccoli are cooked, reserve 1/2 cup of the starchy pasta water, then drain the mixture in a colander.

      Prepare the Alfredo Sauce:

In a large skillet set over medium heat, melt the unsalted butter. Once the butter is fully melted and bubbling gently, add the minced garlic. Sauté the garlic for approximately 1 minute, stirring frequently, until it becomes aromatic but be cautious not to let it burn.

          Add Cream and Cheese:

Reduce the heat to medium-low and slowly pour in the heavy cream. Stir the mixture continuously for about 2-3 minutes, allowing the cream to thicken slightly. Gradually whisk in the grated Parmesan cheese until it melts completely and integrates smoothly into the sauce. Season generously with salt, pepper, and nutmeg, if using, tasting to adjust as necessary.

              Combine Pasta and Sauce:

Gently fold the drained fettuccine and broccoli into the skillet with the creamy Alfredo sauce. Toss the ingredients together until the pasta and vegetables are well-coated. If the sauce appears too thick, gradually add splashes of the reserved pasta water until you achieve your desired creaminess.

                  Serve:

Transfer the creamy broccoli Alfredo pasta to serving plates. Top with a generous sprinkle of fresh parsley for a burst of color. Add extra Parmesan cheese on top, according to personal preference. Serve immediately while hot, and savor every bite!
