1 ripe avocado, peeled and pitted

2 tablespoons Greek yogurt (plain)

1 tablespoon Dijon mustard

1 tablespoon fresh lemon juice

1/4 teaspoon garlic powder

Salt and freshly cracked black pepper, to taste

1/4 cup finely chopped red onion

1/4 cup finely chopped cucumbers

1/4 cup diced bell pepper (choose your favorite color)

4 large whole wheat tortillas

1 cup mixed greens or fresh spinach

Optional: Fresh herbs (such as cilantro or parsley) for garnish

Prepare the Tuna Mixture: In a medium mixing bowl, combine the flaked tuna, ripe avocado, Greek yogurt, Dijon mustard, lemon juice, garlic powder, and a pinch of salt and pepper. Using a fork, mash the avocado and thoroughly mix the ingredients until well combined, but be careful to leave some texture for added interest.
