12 oz spaghetti or linguine

2 ripe avocados, pitted and peeled

1 cup green peas (fresh or frozen)

2 cloves garlic, minced

1/4 cup fresh basil leaves, plus additional for garnish

2 tablespoons lemon juice

1/4 cup extra virgin olive oil

Salt and freshly ground black pepper, to taste

1/4 cup grated Parmesan cheese (optional for a non-vegan version)

Zest from 1 lemon

Red pepper flakes, for a spicy twist (optional)

Cook the Pasta: Bring a large pot of salted water to a boil. Add the spaghetti or linguine and cook according to the package instructions until al dente. Just before draining, reserve 1 cup of the pasta water and set it aside.

    Prepare the Peas: If you're using frozen peas, add them to the pot with the pasta during the last 2 minutes of cooking. For fresh peas, blanch them in boiling water for 2 minutes, then quickly drain and cool under cold water to stop the cooking process.

      Make the Sauce: In a food processor, combine the ripe avocados, minced garlic, basil leaves, lemon juice, olive oil, salt, pepper, and lemon zest. Blend until the mixture is smooth and creamy. If the sauce seems too thick, gradually add reserved pasta water, one tablespoon at a time, until you achieve your desired creamy consistency.
