8 oz. fusilli or rotini pasta

1 cup cherry tomatoes, halved

1 cup mozzarella balls (bocconcini), drained and patted dry

1 cup roasted red bell peppers, cut into bite-sized strips

1/2 cup pitted black olives, halved

1/4 cup fresh basil leaves, washed and dried

1/4 cup balsamic glaze

2 tablespoons extra virgin olive oil

Salt and freshly cracked black pepper, to taste

Wooden or metal skewers (about 8-10 for this amount)

Cook the Pasta: In a large pot, bring salted water to a rolling boil. Add the fusilli or rotini pasta and cook according to the package instructions until al dente. Once done, drain the pasta and rinse it under cold running water to cool it completely. Set the pasta aside in a large mixing bowl.

    Prep the Ingredients: While the pasta is cooling, prepare your other ingredients. Cut the cherry tomatoes in half and slice the roasted red bell peppers into bite-sized strips. Halve the black olives as well. In a separate bowl, gently combine the drained mozzarella balls with the fresh basil leaves, ensuring they are well mixed.
