Ingredients

1 lb boneless, skinless chicken breasts, cut into 1-inch cubes

1 cup coconut milk

1/4 cup fresh lime juice (from about 2-3 limes)

Zest of 1 lime

2 tablespoons honey

2 tablespoons soy sauce (or tamari for gluten-free option)

3 cloves garlic, minced

1 teaspoon ground ginger

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon red pepper flakes (optional for a spicy kick)

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Skewers (if using wooden skewers, soak them in water for 30 minutes beforehand)

Instructions

Marinate the Chicken: In a large mixing bowl, whisk together the coconut milk, fresh lime juice, lime zest, honey, soy sauce, minced garlic, ground ginger, salt, black pepper, and red pepper flakes (if using). Stir until well blended. Add the cubed chicken and toss to ensure each piece is thoroughly coated in the marinade. Cover the bowl with plastic wrap or a lid, and refrigerate for at least 1 hour, opting for overnight marination for deeper flavor infusion.

Prepare the Skewers: If you're using wooden skewers, remove them from the water, drain, and dry them. Thread the marinated chicken cubes onto the skewers, ensuring there is a small gap between each piece. This will help them cook evenly.

Preheat the Grill: Heat your grill or grill pan to medium-high temperature. Lightly brush the grill grates with a little oil to prevent the chicken from sticking.

Grill the Skewers: Place the chicken skewers on the preheated grill. Grill them for approximately 5-7 minutes on each side, or until the chicken is fully cooked and displays beautiful char marks (the internal temperature should reach 165°F for safety).

Garnish and Serve: After grilling, remove the skewers from the grill and place them on a serving platter. Generously sprinkle chopped fresh cilantro on top and serve with lime wedges for an added burst of flavor. Enjoy your Coconut Lime Chicken Skewers alongside fluffy rice or a crisp green salad for a delightful meal!
