Ingredients

2 tablespoons olive oil

1 medium onion, finely chopped

2 cloves garlic, minced

1 medium carrot, finely diced

1 celery stalk, finely diced

500g ground beef (or a 50/50 mix of beef and pork for extra flavor)

1 can (400g) crushed tomatoes

2 tablespoons tomato paste

150ml red wine (optional, but recommended for depth)

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and freshly cracked black pepper, to taste

150ml whole milk

300g spaghetti

Fresh basil or parsley, for garnish

Freshly grated Parmesan cheese, for serving

Instructions

Sauté the Vegetables: In a large skillet or saucepan, heat the olive oil over medium heat until shimmering. Add the finely chopped onion, minced garlic, diced carrot, and diced celery. Sauté for 5-7 minutes until the vegetables have softened and released their aromatic flavors.

Brown the Meat: Increase the heat to medium-high. Add the ground beef (or your meat mix) to the skillet. Use a wooden spoon to break up the meat as it cooks. Brown the meat for about 8-10 minutes, stirring occasionally, until fully cooked and no longer pink.

Build the Sauce: Stir in the crushed tomatoes, tomato paste, and red wine (if using). Add the dried oregano, dried basil, salt, and black pepper to the meat mixture. Lower the heat to a gentle simmer and cook uncovered for about 30 minutes, stirring occasionally to ensure that the sauce thickens and the flavors meld together beautifully.

Add Creaminess: Pour in the whole milk and stir thoroughly to combine. This addition enhances the sauce's creaminess and helps mellow the acidity of the tomatoes. Allow it to simmer for another 10-15 minutes, letting the rich flavors develop.

Cook the Pasta: While the sauce simmers, bring a large pot of salted water to a boil. Add the spaghetti and cook according to the package directions until al dente. Before draining, reserve a cup of the pasta cooking water. Drain the spaghetti and set it aside.

Combine: Toss the drained spaghetti into the Bolognese sauce in the skillet. Add a splash of reserved pasta water if the sauce needs loosening. Mix well to ensure that each strand of spaghetti is fully coated in the rich sauce.

Serve: Plate the spaghetti generously topped with the Bolognese sauce. Garnish with fresh basil or parsley for a burst of color and freshness. Finish with a generous sprinkle of freshly grated Parmesan cheese for that delicious, savory finish.

                  - Presentation Tips: For an elegant touch, twirl the spaghetti into neat nests on plates, artfully drizzling some extra sauce around the edges and finishing with a few whole basil leaves. Serve with rustic bread on the side for mopping up leftover sauce!
