Ingredients

4 large yellow onions, thinly sliced

4 tablespoons unsalted butter

1 tablespoon olive oil

1 teaspoon sugar

1 teaspoon kosher salt

1/4 teaspoon freshly ground black pepper

1 tablespoon all-purpose flour

8 cups beef or vegetable broth

1 cup dry white wine or sherry (optional)

1 bouquet garni (1 sprig of fresh thyme, 1 bay leaf, and a few parsley stems tied together)

Baguette or your favorite crusty bread, sliced

2 cups grated Gruyère cheese

1/2 cup grated Parmesan cheese

Instructions

Caramelize the Onions: In a large, heavy-bottomed pot, combine the butter and olive oil over medium heat. Once melted, add the sliced onions along with the sugar, salt, and pepper. Cook, stirring frequently, for 30-40 minutes, allowing the onions to become deeply browned and caramelized. Adjust the heat if necessary to prevent burning at any stage.

Thicken the Soup: When the onions have reached a rich caramel color, sprinkle the flour evenly over them and stir to combine. Cook for an additional 2-3 minutes, allowing the flour to cook slightly and thicken the mixture.

Add Liquids: Gradually pour in the white wine (if using), scraping the bottom of the pot to release any flavorful bits. Let this simmer for about 5 minutes to reduce slightly. Following this, add the broth and the bouquet garni to the pot. Stir to combine.

Simmer the Soup: Increase the heat to bring the soup to a gentle simmer. Cook uncovered for 30-40 minutes, allowing the flavors to meld beautifully. Taste and adjust the seasoning as necessary.

Prepare the Bread: While the soup is simmering, preheat your oven to 400°F (200°C). On a baking sheet, arrange the baguette slices in a single layer. Toast them in the oven for about 10 minutes, or until they are golden brown and crispy.

Assemble the Bowls: Once the soup is done simmering, remove the bouquet garni. Ladle the hot soup into oven-safe bowls, ensuring they are generously filled. Place a slice of the toasted baguette on top of each bowl, followed by a generous sprinkle of Gruyère and Parmesan cheeses.

Broil to Perfection: Arrange the bowls on a baking sheet for easy handling. Broil in the oven for 3-5 minutes, or until the cheese is fully melted and bubbly, keeping a watchful eye to prevent burning.

Serve: Once out of the oven, let the bowls cool slightly before serving. Garnish with fresh thyme leaves if desired, and enjoy your elegant French onion soup hot.
