8 ounces rotini pasta

2 cups cooked chicken breast, diced into bite-sized pieces

1 cup cherry tomatoes, halved

1 ripe avocado, diced

4 hard-boiled eggs, peeled and chopped

6 slices of crispy bacon, crumbled

1 cup blue cheese, crumbled

3 green onions, finely sliced

1/4 cup fresh parsley, chopped

Salt and pepper, to taste

For the Dressing:

1/3 cup extra virgin olive oil

2 tablespoons red wine vinegar

1 tablespoon Dijon mustard

1 teaspoon garlic powder

1 teaspoon onion powder

Cook the Pasta: In a large pot, bring salted water to a rolling boil. Add the rotini pasta and cook according to package instructions until al dente. Once done, drain the pasta and rinse under cold water to halt the cooking process. Set the pasta aside to cool completely.
