Ingredients

4 boneless, skinless chicken breasts

4 slices of Swiss cheese

4 slices of ham (preferably Black Forest or honey ham)

1 cup panko breadcrumbs (for extra crunch)

1/2 cup all-purpose flour

2 large eggs

1 tablespoon Dijon mustard

1 teaspoon garlic powder

1 teaspoon dried thyme

Salt and pepper to taste

Cooking spray or melted butter for greasing the baking sheet

Instructions

Preheat the Oven: Start by preheating your oven to 375°F (190°C). Line a baking sheet with parchment paper to prevent sticking.

Prepare the Chicken: Take each chicken breast and place it between two pieces of plastic wrap. Using a meat mallet, gently pound the chicken until it reaches an even thickness of about 1/2 inch. Season both sides with salt and pepper for flavor.

Stuff the Chicken: On each chicken breast, lay a slice of ham followed by a slice of Swiss cheese. Carefully roll the chicken tightly from the smaller end, ensuring the filling stays inside. Secure each roll with toothpicks if needed.

        Set up the Breading Station:

          - In a shallow bowl, combine the all-purpose flour, garlic powder, dried thyme, salt, and pepper.

            - In a second bowl, whisk together the eggs and Dijon mustard until fully blended.

              - In a third bowl, place the panko breadcrumbs.

Coat the Chicken: Take each chicken roll and first dredge it in the flour mixture, shaking off the excess. Next, dip it into the egg mixture, allowing any leftover to drip off. Finally, coat each roll with panko breadcrumbs, pressing lightly to help them stick.

Arrange for Baking: Place the breaded chicken rolls seam-side down on the lined baking sheet. Lightly spray the tops with cooking spray or brush with melted butter for a beautiful, golden finish.

Bake the Chicken: Transfer the baking sheet to the preheated oven and bake for 25-30 minutes. The chicken is done when it reaches an internal temperature of 165°F (74°C) and the breading is crunchy and golden.

Serve: Once baked, let the chicken rolls rest for about 5 minutes before removing the toothpicks. Slice each roll into medallions and serve alongside your favorite vegetables or a refreshing light salad.
