Ingredients

1 cup pitted Medjool dates

1 cup unsweetened shredded coconut (plus extra for rolling)

1/2 cup almond flour

1/4 cup unsweetened cocoa powder

1/4 cup almond butter or peanut butter (your choice)

1 tsp pure vanilla extract

1/4 tsp sea salt

2-3 tbsp pure maple syrup (optional, for added sweetness)

1/4 cup dark chocolate chips (use dairy-free if preferred)

Instructions

Prepare the Dates: If your Medjool dates are a bit firm, soak them in warm water for about 10 minutes to soften. Once softened, drain the water and pat the dates dry with a paper towel.

Blend Ingredients: In a food processor, add the soaked dates, shredded coconut, almond flour, cocoa powder, nut butter, vanilla extract, and sea salt. Process the mixture until it is well combined and begins to clump together, stopping occasionally to scrape down the sides of the bowl for even blending.

Adjust Sweetness: Taste the blended mixture. If you like it sweeter, incorporate maple syrup one tablespoon at a time, pulsing the processor after each addition until the desired level of sweetness is reached.

Add Chocolate Chips: Carefully fold in the dark chocolate chips using a spatula or spoon, making sure they are evenly distributed throughout the mixture.

Form Balls: Scoop out tablespoon-sized portions of the mixture and roll them into smooth balls using your palms. If the mixture is too sticky, lightly dampen your hands with a little water or coconut oil to make rolling easier.

Coat with Coconut: Place the extra shredded coconut in a shallow dish. Roll each bliss ball in the coconut until they are fully coated and place them on a parchment-lined baking sheet.

Chill: Transfer the baking sheet with the bliss balls to the refrigerator and let them chill for at least 30 minutes. This will help them firm up.

Serve and Enjoy: Once the bliss balls are set, store them in an airtight container. They can be enjoyed immediately, but will stay fresh in the fridge for up to a week.

Prep Time, Total Time, Servings: 15 mins | 45 mins (including chilling) | Makes 12-15 bliss balls

                    - Presentation Tips: For a delightful touch, serve the bliss balls in mini cupcake liners on a platter, and sprinkle some extra shredded coconut around for decoration.
