2 cups fresh corn kernels (approximately 4 ears of corn, or use 2 cups of frozen corn, thawed)

1 medium red onion, finely diced

2 medium tomatoes, diced (alternatively, use 1 cup of cherry tomatoes, halved)

1-2 chipotle peppers in adobo sauce, finely chopped (adjust for preferred spice level)

2 tablespoons adobo sauce (from the can of chipotle peppers)

1/4 cup fresh cilantro, chopped

Juice of 1 lime

1 teaspoon ground cumin

Salt and pepper, to taste

Optional: 1 ripe avocado, diced (for added creaminess)
