1 pound large shrimp, peeled and deveined

2 ripe avocados, diced

1 cup cherry tomatoes, halved

1/2 cup red onion, finely chopped

1/4 cup fresh cilantro, chopped

1 jalapeño, seeds removed and finely diced

Juice of 2 limes

3 tablespoons olive oil

Salt and pepper, to taste

1 teaspoon garlic powder

1 teaspoon smoked paprika

Mixed greens (for serving)

Prepare the Shrimp: Fill a large pot with water, adding a generous amount of salt, and bring it to a rapid boil. Once boiling, carefully add the peeled and deveined shrimp. Cook the shrimp for approximately 2-3 minutes, or until they change color to bright pink and are opaque all the way through. Quickly drain the shrimp and plunge them into a bowl filled with ice water to halt the cooking process. After a few minutes, drain the shrimp again and set them aside.
