200g firm tofu, pressed and cut into strips

2 tablespoons soy sauce

1 tablespoon chili garlic sauce (adjust to your heat preference)

1 tablespoon fresh lime juice

1 teaspoon agave syrup or honey

1 teaspoon sesame oil

8 rice paper sheets

1 cup fresh mint leaves, washed and dried

1 cup fresh cilantro leaves, washed and dried

1 medium cucumber, julienned

1 medium carrot, julienned

1 ripe avocado, thinly sliced

Optional dipping sauce: sweet chili sauce or peanut sauce

Instructions
 

Prepare the Tofu Marinade: In a mixing bowl, combine soy sauce, chili garlic sauce, lime juice, agave syrup (or honey), and sesame oil. Whisk until the mixture is well-blended. Add the sliced tofu to the bowl, ensuring all pieces are evenly coated in the marinade. Let it sit for a minimum of 15 minutes to allow the flavors to infuse into the tofu.

    Cook the Tofu: Heat a non-stick skillet over medium-high heat and add a drizzle of cooking oil to coat the bottom. Once the skillet is hot, carefully place the marinated tofu strips in the pan. Cook for about 3-4 minutes on each side until the tofu is golden brown and slightly crispy. Once cooked, transfer the tofu to a plate and let it cool slightly.

      Set Up Your Workspace: Organize all ingredients within easy reach, including the fresh herbs, julienned cucumber, carrot, and avocado. Fill a shallow dish or skillet with warm water to soak the rice paper.

        Soften Rice Paper: Take one rice paper sheet and dip it into the warm water for approximately 10-15 seconds, or until it softens and becomes pliable. Gently lift out the sheet and place it flat on a clean, dry surface.

          Assemble the Rolls: On the lower third of the softened rice paper, layer a small handful of mint and cilantro leaves, followed by some julienned cucumber, julienned carrot, a slice of avocado, and 2-3 strips of cooked tofu. Ensure to leave a small border on the sides of the rice paper to help with rolling.

            Roll Up the Rice Paper: Start by folding the sides of the rice paper in towards the filling to create a pocket. Next, tightly roll the paper from the bottom edge upwards, ensuring that the filling remains secure inside. Repeat this process with the remaining rice paper sheets and filling ingredients to make additional rolls.

              Serve: Arrange the completed rice paper rolls neatly on a serving platter. If desired, serve with a small bowl of sweet chili sauce or creamy peanut sauce for dipping.
