1 block (14 oz) firm tofu, pressed and drained

3 tablespoons soy sauce

2 tablespoons sesame oil

2 tablespoons chili garlic sauce (adjust for desired spiciness)

1 tablespoon maple syrup

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 bell pepper, cut into bite-sized chunks (any color)

1 red onion, cut into wedges

1 zucchini, sliced into approximately ½-inch rounds

Skewers (metal or soaked wooden skewers)

Fresh cilantro or sliced green onions for garnish (optional)

Instructions
 

Prepare the Tofu: Start by cutting the pressed tofu into 1-inch cubes, ensuring they are uniform for even cooking. Set the tofu cubes aside.

    Make the Marinade: In a medium mixing bowl, combine soy sauce, sesame oil, chili garlic sauce, maple syrup, minced garlic, and grated ginger. Whisk the mixture vigorously until all ingredients are well blended and smooth.

      Marinate the Tofu: Gently add the tofu cubes to the marinade, using a spatula or spoon to carefully toss and coat the tofu evenly. For maximum flavor, cover the bowl and let the tofu marinate for at least 30 minutes at room temperature, or refrigerate for up to 2 hours.
