1 ripe avocado

1 can (15 oz) chickpeas, drained and rinsed

1 tablespoon extra virgin olive oil

1 teaspoon freshly squeezed lemon juice

1 garlic clove, finely minced

¼ teaspoon smoked paprika

Salt and freshly ground black pepper, to taste

4 slices of whole-grain bread

Fresh herbs (such as cilantro or parsley), for garnish

Prepare the Chickpeas: In a medium-sized mixing bowl, add the drained and rinsed chickpeas. Using a fork or potato masher, gently mash the chickpeas until they are mostly broken down but still have some visible chunks for texture—this should take about 1-2 minutes.
