2 cups cooked chicken, shredded (rotisserie chicken works wonderfully!)

4 tablespoons unsalted butter

1/4 cup all-purpose flour

3 cups whole milk

2 cups sharp cheddar cheese, grated

1 cup mozzarella cheese, grated

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

Salt and pepper, to taste

1/4 cup breadcrumbs (optional for topping)

Fresh parsley, chopped (for garnish)

Cook the Pasta: Begin by bringing a large pot of salted water to a rolling boil. Once the water is boiling, add the elbow macaroni and cook according to the package instructions until al dente (usually about 7-8 minutes). Drain the pasta in a colander and set aside.

    Make the Cheese Sauce: In the same pot used for the pasta, melt the unsalted butter over medium heat. Once melted and bubbling, sprinkle in the flour while whisking continuously for about 1-2 minutes to create a smooth roux, which will help thicken your sauce.

      Add Milk: Gradually pour in the whole milk, whisking diligently to prevent any lumps from forming. Keep stirring and cooking until the mixture thickens and begins to bubble, which should take about 5-7 minutes.

        Incorporate Cheese: Lower the heat to a gentle simmer. Stir in the grated sharp cheddar and mozzarella cheese, mixing until completely melted and smooth.
