1 lb boneless, skinless chicken breasts, thinly sliced

2 tablespoons olive oil

1 medium onion, thinly sliced

1 medium green bell pepper, thinly sliced

1 medium red bell pepper, thinly sliced

4 ounces mushrooms, sliced (optional)

3 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon dried oregano

Salt and pepper to taste

4 slices provolone cheese (or your favorite cheese)

4 large hoagie rolls or sub rolls

Optional toppings: mayonnaise, hot sauce, sautéed jalapeños

Cook for about 5-7 minutes, stirring occasionally, until the chicken is browned and fully cooked (internal temperature should reach 165°F). Once done, remove the chicken from the skillet and set it aside on a plate.

      Sauté the Vegetables: In the same skillet, add the sliced onions, green bell pepper, red bell pepper, and mushrooms (if using).
