Ingredients

20 large jumbo pasta shells

2 cups cooked chicken, shredded (grilled or store-bought rotisserie chicken works well)

1 cup ricotta cheese

1 cup shredded mozzarella cheese (plus extra for topping)

1/2 cup grated Parmesan cheese

1 1/2 cups Alfredo sauce (store-bought or homemade)

1 teaspoon garlic powder

1 teaspoon Italian seasoning

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions

Cook the Pasta Shells: In a large pot, bring salted water to a rolling boil. Carefully add the jumbo pasta shells and cook according to the package instructions until al dente, typically around 8-10 minutes. Once cooked, drain the shells and rinse them under cold water to halt the cooking process. Set aside to cool.

Prepare the Filling: In a large mixing bowl, combine the shredded chicken, ricotta cheese, 1 cup of mozzarella cheese, grated Parmesan cheese, garlic powder, Italian seasoning, and a pinch of salt and pepper. Use a spatula to mix the ingredients together until they are evenly combined and creamy.

Fill the Shells: Preheat your oven to 350°F (175°C). Using a spoon or small cookie scoop, take portions of the chicken and cheese mixture, and carefully fill each pasta shell. Be sure to pack the filling well into each shell so they're generously stuffed. Repeat this process until all shells are filled.

Assemble the Dish: In a 9x13 inch baking dish, spread 1/2 cup of Alfredo sauce evenly across the bottom. Arrange the stuffed shells in the dish, placing them seam side up. Pour the remaining Alfredo sauce over the top, ensuring all shells are coated. Finish by sprinkling additional mozzarella cheese generously over the entire dish.

Bake: Cover the baking dish with aluminum foil. To prevent sticking, lightly spray the underside of the foil with cooking spray before placing it over the dish. Bake in the preheated oven for 20 minutes. After 20 minutes, remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and lightly golden on top.

Garnish and Serve: Once done, take the dish out of the oven and allow it to cool for about 5 minutes. Just before serving, garnish with chopped fresh parsley for a pop of color and freshness. Indulge in your creamy, comforting creation!

              Prep Time: 20 minutes | Total Time: 50 minutes | Servings: 4-6

                - Presentation Tips: Serve the stuffed shells on individual plates for an elegant touch, drizzling some extra Alfredo sauce around the edges. Consider garnishing with additional parsley and a sprinkle of grated Parmesan for added flair.
