8 oz (225g) pasta (choose your favorite: spaghetti, fettuccine, or rigatoni)

2 cups cherry tomatoes, halved

1 clove garlic, minced

2 tablespoons olive oil

Salt and freshly cracked black pepper, to taste

1 teaspoon red pepper flakes (optional, for added heat)

1 cup fresh basil leaves, loosely packed

8 oz (225g) burrata cheese

Grated Parmesan cheese, for serving

Zest of 1 lemon (optional, for brightness)

Balsamic glaze, for drizzling (optional, for sweetness)

Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente, usually about 8-10 minutes. Once cooked, reserve about ½ cup of the pasta water and then drain the pasta. Set it aside for later use.

    Sauté Cherry Tomatoes: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for approximately 30 seconds or until it becomes fragrant; be careful not to let it burn. Next, add the halved cherry tomatoes, along with salt, pepper, and red pepper flakes (if using). Cook the mixture for about 5-7 minutes, stirring occasionally, until the tomatoes are tender and have blistered slightly.
