Cheesy Turkey and Spinach Stuffed Shells

20 large pasta shells

1 pound ground turkey

2 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup mozzarella cheese, shredded (+ ½ cup for topping)

½ cup grated Parmesan cheese

1 egg, beaten

2 cloves garlic, minced

1 teaspoon Italian seasoning

Salt and pepper to taste

2 cups marinara sauce

Fresh basil for garnish (optional)

Instructions
 

Preheat Oven: Begin by preheating your oven to 375°F (190°C).

    Cook Pasta Shells: In a large pot, bring salted water to a boil. Add the pasta shells and cook according to the package instructions until al dente. Drain the shells carefully and set aside to cool.

      Prepare Filling: In a large skillet set over medium heat, add the ground turkey. Sauté until browned, breaking it up with a spatula as it cooks, which should take about 5-7 minutes. Once browned, add the minced garlic and chopped spinach. Sauté the mixture until the spinach is wilted, roughly 2-3 minutes.

        Mix Ingredients: In a spacious mixing bowl, combine the turkey-spinach mixture with ricotta cheese, ½ cup of mozzarella, grated Parmesan, the beaten egg, Italian seasoning, and a pinch of salt and pepper. Stir well until everything is evenly mixed.

          Stuff the Shells: Grab a teaspoon and gently stuff each pasta shell with the savory turkey and spinach filling. Be generous!

            Assemble Dish: Pour 1 cup of marinara sauce into the bottom of a 9x13 inch baking dish and spread it out evenly. Lay the stuffed shells in a single layer over the sauce, then pour the remaining marinara sauce over the top. Finally, sprinkle with the reserved ½ cup of mozzarella cheese.
