2 medium eggplants, sliced lengthwise into 1/4-inch thick strips

2 cups ricotta cheese

1 cup shredded mozzarella cheese, divided

1/2 cup grated Parmesan cheese

1 large egg

2 cups fresh spinach (or frozen, thawed and well-drained)

3 cups marinara sauce (store-bought or homemade)

1 teaspoon garlic powder

1 teaspoon Italian seasoning

Salt and pepper, to taste

Olive oil, for brushing

Fresh basil leaves, for garnish

Instructions
 

Prepare the Eggplant:

    - Preheat your oven to 400°F (200°C).

      - Place the sliced eggplants on a large baking sheet in a single layer. Brush both sides of each slice lightly with olive oil and season with salt.

        - Bake in the preheated oven for approximately 20 minutes, flipping the slices halfway through, until they are tender and slightly golden. Remove from the oven and allow them to cool.

          Make the Cheese Filling:
