Ingredients

1 medium head of cauliflower, cut into bite-sized florets

1 medium head of broccoli, cut into bite-sized florets

2 cups shredded sharp cheddar cheese

1 cup grated Parmesan cheese, divided

1 cup milk (whole or 2%)

1/2 cup heavy cream

3 tablespoons unsalted butter

1/4 cup all-purpose flour

2 cloves garlic, minced

1/2 teaspoon onion powder

1/2 teaspoon paprika (smoky or sweet, based on preference)

Salt and freshly ground pepper, to taste

1/2 cup breadcrumbs (optional for a crunchy topping)

1 tablespoon olive oil (optional for the topping)

Fresh parsley, finely chopped, for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) to get it ready for baking.

Blanch the Vegetables: Fill a large pot with water, add a generous amount of salt, and bring it to a boil. Once boiling, add the cauliflower and broccoli florets. Blanch the vegetables for 3-4 minutes until they become slightly tender but still maintain a crisp texture. Immediately drain the vegetables and plunge them into a bowl of ice water to halt the cooking process. After a few minutes in the ice bath, drain the vegetables again and set them aside.

Make the Cheese Sauce: In a large skillet over medium heat, melt the unsalted butter. Add the minced garlic and sauté for about 30 seconds until fragrant, being careful not to brown it. Immediately add the flour, stirring constantly for approximately 1 minute to form a smooth roux.

Add Milk and Cream: Gradually whisk in the milk and then the heavy cream, making sure there are no lumps. Keep whisking continuously as the mixture simmers and thickens, which should take about 5-6 minutes.

Incorporate the Cheeses: Once the sauce has thickened, remove it from heat and stir in the shredded sharp cheddar cheese and half of the grated Parmesan cheese. Continue to mix until the cheese is fully melted and the sauce is smooth. Season with onion powder, paprika, salt, and freshly ground pepper to taste.

Combine Vegetables and Sauce: In a large rectangular baking dish, gently combine the blanched cauliflower and broccoli florets with the cheese sauce. Stir thoroughly to ensure that all the vegetables are evenly coated in the rich sauce.

Prepare the Topping: If you choose to use breadcrumbs for a crunchy topping, mix the breadcrumbs with 1 tablespoon of olive oil and the remaining half of the Parmesan cheese in a small bowl until well combined. Sprinkle this mixture evenly over the cheesy vegetable medley.

Bake: Transfer the baking dish to the preheated oven and bake for 25-30 minutes, or until the top has turned golden brown and bubbly.

Garnish and Serve: Once baked, remove the dish from the oven and allow it to rest for about 5 minutes. If desired, garnish with finely chopped fresh parsley before serving for a pop of color and added flavor.

                    Prep Time: 15 minutes | Total Time: 45 minutes | Serves: 6-8

                      - Presentation Tips: Serve the Cheesy Cauliflower Broccoli Bake directly from the baking dish, and consider placing a sprig of parsley or a thin slice of lemon on each serving plate for an extra touch.
