Ingredients

2 cups cooked white or brown rice

3 cups fresh broccoli florets (or 2 cups frozen broccoli)

1 cup shredded cheddar cheese (plus additional for topping)

1 cup shredded mozzarella cheese

1 can (10.5 oz) cream of mushroom soup (or a homemade alternative)

1/2 cup milk (or your favorite non-dairy substitute)

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon black pepper

1/4 teaspoon salt (adjust to taste)

1/2 cup breadcrumbs (optional for added crunch)

2 tablespoons olive oil or melted butter (for the breadcrumb topping, if used)

Instructions

Preheat the Oven: Start by preheating your oven to 350°F (175°C) to ensure it’s ready for baking.

Prepare the Broccoli: If using fresh broccoli, bring a pot of water to a rolling boil. Add the broccoli florets and blanch them for 2-3 minutes, just long enough to make them vibrant and tender-crisp. Immediately transfer the florets to a bowl of ice water to halt the cooking. Once cooled, drain and set the broccoli aside. If using frozen broccoli, simply allow it to thaw and drain any excess moisture.

Combine Ingredients: In a large mixing bowl, combine the cooked rice, the prepared broccoli (blanched or thawed), shredded cheddar cheese, shredded mozzarella cheese, cream of mushroom soup, milk, garlic powder, onion powder, black pepper, and salt. Stir the mixture well until all ingredients are evenly distributed and coated.

Grease the Casserole Dish: Lightly coat a 9x13-inch casserole dish with cooking spray or a drizzle of olive oil to prevent sticking.

Transfer the Mixture: Pour the well-mixed broccoli and rice combination into the prepared casserole dish, spreading it evenly with a spatula or spoon.

Add Breadcrumb Topping (optional): In a small bowl, mix the breadcrumbs with olive oil or melted butter, ensuring they are lightly coated. Evenly sprinkle this breadcrumb mixture over the top of the casserole. For an extra cheesy touch, you may also add a handful of shredded cheddar atop the breadcrumbs.

Bake: Place the casserole into the preheated oven and bake for 25-30 minutes, or until the cheese is fully melted, bubbly, and the top has turned a lovely golden brown.

Serve: Once baked, carefully take the casserole out of the oven. Allow it to cool for a few minutes before serving, letting it set slightly. This cheesy delight makes for a fantastic main dish or a hearty side that’s sure to please.

                  Prep Time: 15 mins | Total Time: 45 mins | Servings: 6-8

Presentation Tips: For a polished presentation, serve the casserole in individual portions garnished with a sprinkle of fresh parsley or chives. This will add a pop of color and a delightful freshness!
