Cheesy Black Bean & Avocado Queso Skillet

1 can (15 oz) black beans, rinsed and drained

1 ripe avocado, diced into small cubes

1 cup shredded sharp cheddar cheese

1 cup shredded Monterey Jack cheese

1 cup diced tomatoes (can be fresh or canned, drained well)

½ cup finely diced red onion

1 small jalapeño, finely chopped (remove seeds for less heat)

2 cloves garlic, minced

½ cup cream cheese, softened to room temperature

1 tsp ground cumin

1 tsp smoked paprika

½ tsp chili powder

Salt and pepper to taste

Fresh cilantro, chopped, for garnish

Tortilla chips, for serving

Instructions
 

Prepare the Base: In a large skillet over medium heat, drizzle in some olive oil. Add the finely diced red onion and jalapeño, sautéing until they are soft and translucent, about 3-4 minutes. Add the minced garlic to the skillet and sauté for an additional minute, or until fragrant.
