Ingredients

1 cup rolled oats

1/2 cup almond butter (or substitute with peanut butter)

1/4 cup honey or maple syrup

1/4 cup finely chopped dried figs

1/4 cup mini dark chocolate chips

1/4 cup chopped nuts (such as walnuts, almonds, or pecans)

1/4 cup unsweetened shredded coconut

1/2 teaspoon sea salt

1/2 teaspoon vanilla extract

Optional: 1/4 cup diced salami or prosciutto for a savory twist

Instructions

Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, finely chopped dried figs, mini dark chocolate chips, chopped nuts, shredded coconut, and sea salt. Stir gently until the dry ingredients are evenly distributed.

Stir in Wet Ingredients: In a separate bowl, mix together the almond butter, honey (or maple syrup), and vanilla extract. Blend until the mixture is smooth and uniform. If you are incorporating the optional savory ingredients, add the diced salami or prosciutto at this stage and stir well to combine.

Combine Mixtures: Pour the smooth wet mixture into the bowl with the dry ingredients. Use a sturdy spoon or spatula to thoroughly blend the two mixtures together until you achieve a sticky dough-like consistency. If the mixture appears too dry, add a splash of honey or a tad more almond butter to reach the desired texture.

Form Energy Bites: With clean hands, scoop about tablespoon-sized portions of the mixture and roll them into balls. Place each formed ball onto a parchment-lined baking sheet or plate, ensuring they are spaced apart to prevent sticking.

Chill: Refrigerate the energy bites for a minimum of 30 minutes. This chilling time will help the bites firm up for easier handling and an improved texture.

Serve: Once chilled, enjoy these energy bites as a nutritious snack or a quick energy boost whenever needed! Store any leftovers in an airtight container in the refrigerator, where they will keep fresh for up to a week.

              Prep Time: 15 minutes

Total Time: 45 minutes (including chilling)
