Cajun Shrimp and Grits Casserole

For the Grits:

1 cup stone-ground grits

4 cups chicken broth

1 cup sharp cheddar cheese, shredded

1/2 cup heavy cream

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon freshly ground black pepper

For the Cajun Shrimp:

1 pound large shrimp, peeled and deveined

3 tablespoons olive oil

1 bell pepper, diced (choose red or green for color)

1 small onion, finely diced

2 cloves garlic, minced

1 tablespoon Cajun seasoning

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (or to taste)

1 tablespoon Worcestershire sauce

1 tablespoon freshly squeezed lemon juice

Salt and pepper to taste

2 green onions, sliced (for garnish)

For the Topping:

1 cup panko breadcrumbs

2 tablespoons melted butter

1/2 cup fresh parsley, chopped

Prepare the Grits:

    In a medium-sized saucepan, bring the chicken broth to a rolling boil. Slowly whisk in the stone-ground grits to avoid lumps, then reduce the heat to low. Simmer, stirring frequently, for 20-25 minutes, or until the grits have thickened and are creamy. If they become too thick, gradually add more chicken broth or water to reach your desired consistency. Once cooked, incorporate the cheddar cheese, heavy cream, garlic powder, onion powder, salt, and black pepper. Mix well and set aside.

      Cook the Cajun Shrimp:

        While the grits are cooking, heat the olive oil in a large skillet over medium heat. Add the diced bell pepper, onion, and minced garlic, sautéing until the onion is translucent and fragrant, about 3-5 minutes. Add the shrimp to the pan along with the Cajun seasoning, smoked paprika, cayenne pepper, Worcestershire sauce, and lemon juice. Cook for an additional 3-4 minutes, or until the shrimp turn pink and opaque. Season with salt and pepper to taste, then remove from heat and allow to cool slightly.

          Combine Grits and Shrimp:

            Preheat your oven to 375°F (190°C). In a large mixing bowl, gently combine the creamy grits with the Cajun shrimp mixture, folding them together to maintain the grits’ texture.

              Assemble the Casserole:

                Grease a 9x13 inch baking dish with butter or cooking spray. Pour the grits and shrimp combination into the dish, spreading it evenly. In a small bowl, mix the melted butter with the panko breadcrumbs and chopped parsley until well combined. Evenly sprinkle this topping over the grits and shrimp mixture.

                  Bake:

                    Place the casserole in the preheated oven and bake for 25-30 minutes, or until the top is crisp and golden brown, and the casserole is heated through.
