Ingredients
  

  • 4 pieces garlic naan
  • 1 cup cooked chicken or chickpeas
  • 1 cup fresh spinach leaves
  • 1 medium tomato, sliced
  • 0.5 cucumber thinly sliced
  • 0.5 red onion thinly sliced
  • 1 cup shredded mozzarella cheese
  • 0.25 cup mayonnaise
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh basil, chopped
  • 2 tablespoons butter, melted
  • 2 cloves garlic, minced
  • to taste salt
  • to taste pepper

Instructions
 

  • Prepare the Garlic Butter: In a small bowl, combine the melted butter, minced garlic, and chopped parsley and basil. Stir well and set aside.
  • Toast the Naan: Preheat a pan or griddle over medium heat. Brush one side of each garlic naan with the garlic butter mixture. Place the naans butter-side down on the pan, and toast for 2-3 minutes until golden and crispy. Meanwhile, check the underside to avoid burning.
  • Assemble the Sandwich: Once the naans are toasted, remove them from the pan and layer the fillings. Start with a base of fresh spinach leaves on one side of the naan, followed by cooked chicken or chickpeas, sliced tomatoes, cucumbers, red onions, and a generous sprinkle of shredded mozzarella cheese.
  • Add Condiments: Drizzle the mayonnaise over the layered ingredients. If you like it spicy, add a few drops of hot sauce or sriracha according to your taste.
  • Finish and Melt: Carefully fold the naan over the fillings to create a sandwich. Return it to the pan, pressing down gently. Cook for another 2-3 minutes on each side until the cheese melts and the naan is golden brown.
  • Serve: Remove the sandwich from the pan, slice it in half, and serve immediately with any extra garlic butter or your favorite dipping sauce on the side.
