Ingredients

1 lb ground chicken

1 cup fresh buffalo mozzarella, diced

¼ cup fresh basil, finely chopped

1 tablespoon garlic powder

1 tablespoon onion powder

1 teaspoon salt

½ teaspoon black pepper

½ cup breadcrumbs (Italian-flavored for extra zest, optional)

1 large egg

½ cup buffalo sauce (plus extra for drizzling and serving)

1 tablespoon olive oil (for cooking)

Fresh parsley, chopped, for garnish

Instructions

Prepare the Chicken Mixture: In a large mixing bowl, combine the ground chicken with garlic powder, onion powder, salt, black pepper, breadcrumbs, and egg. Use your hands or a spatula to mix until just blended, being careful not to overwork the mixture to keep the patties tender.

Incorporate Flavor: Gently fold the chopped basil and diced buffalo mozzarella into the chicken mixture. Take care to preserve the integrity of the cheese chunks so they create delightful melty pockets in the patties.

Form the Patties: Divide the mixture into 4 equal parts. Take one portion and flatten it into your palm to form a disc. Place about 1 tablespoon of buffalo sauce in the center, then fold the edges over the sauce to seal it inside, shaping it into a round patty. Repeat this process with the remaining portions of the mixture.

Heat the Pan: In a large skillet, warm the olive oil over medium heat. Allow the oil to reach a sizzling temperature before adding the patties to ensure they develop a nice crust.

Cook the Patties: Carefully place the patties into the skillet, ensuring there is space between each one. Cook for approximately 5-6 minutes until the underside is golden brown. Flip the patties and continue cooking for another 5-6 minutes, monitoring the internal temperature, which should reach 165°F (74°C).

Add Extra Spice: In the final minute of cooking, drizzle a bit of extra buffalo sauce over each patty. This will allow the sauce to caramelize and infuse more flavor into the patties.

Serve: Once fully cooked, transfer the patties to a plate and let them rest for a few minutes to retain juiciness. Serve warm, garnished with fresh parsley and additional buffalo sauce on the side for dipping.
