1 medium spaghetti squash

2 cups cooked shredded chicken (rotisserie chicken works great)

1/2 cup Buffalo sauce (adjust to taste)

1/2 cup cream cheese, softened

1/2 cup shredded cheddar cheese

1/4 cup green onions, chopped (for garnish)

    Prep the spaghetti squash: Carefully cut the spaghetti squash in half lengthwise. Scoop out the seeds using a spoon. Drizzle the insides of each half with olive oil, ensuring they are well coated. Sprinkle with a pinch of salt and freshly cracked pepper.

      Roast the squash: Place the prepared squash halves cut-side down on a baking sheet. Roast in the preheated oven for about 30-35 minutes. The squash is ready when its flesh is tender and can be easily pierced with a fork.

        Make the filling: While the squash roasts, prepare the filling. In a mixing bowl, combine the shredded chicken, Buffalo sauce, softened cream cheese, and half of the shredded cheddar cheese (reserve the rest for topping). Mix thoroughly until you achieve a creamy and well-blended texture.

          Scrape and combine: Once the squash is roasted, allow it to cool for a few minutes. Use a fork to scrape the flesh into spaghetti-like strands. Add these strands to the bowl with the Buffalo chicken mixture, stirring well to ensure an even distribution.
