Ingredients

1 cup fresh pineapple, diced

1 cup ripe mango, diced

1 cup strawberries, hulled and halved

1 cup kiwi, peeled and sliced

1 cup blueberries

1 banana, sliced

1/4 cup unsweetened shredded coconut

Juice of 1 lime

1 tablespoon honey (optional, for sweetness)

Fresh mint leaves for garnish

Instructions

Prepare the Fruit: Begin by thoroughly washing all the fruits under cool water. Hull the strawberries by removing the leafy tops and then halve them. Peel the kiwi and slice it into rounds. Dice the fresh pineapple and mango into bite-sized pieces. Lastly, slice the banana into rounds but save this step for last to minimize browning.

Mix the Ingredients: In a large mixing bowl, carefully combine the diced pineapple, mango, halved strawberries, sliced kiwi, blueberries, and banana. Gently toss the fruits together using a spatula or large spoon, ensuring not to mash the softer fruits like bananas and strawberries.

Add Coconut and Dressing: Once the fruit is well mixed, sprinkle the shredded coconut evenly over the top. In a small bowl, whisk together the fresh lime juice and honey (if you choose to add it) until fully incorporated. Drizzle the dressing over the fruit salad and gently toss again to ensure every piece is lightly coated.

Chill and Serve: Allow the salad to sit for about 10 minutes at room temperature. This waiting time helps the flavors blend together beautifully. For a cooler refreshment, transfer the fruit salad to the refrigerator and chill it for 20-30 minutes.

Garnish: Right before serving, thoughtfully garnish the salad with fresh mint leaves, which adds a vibrant touch and an aromatic freshness.
