Ingredients

1 lb ripe heirloom tomatoes, halved

8 oz burrata cheese, at room temperature

1 cup cherry tomatoes, halved

2 cloves garlic, minced

¼ cup fresh basil leaves, torn

2 tbsp balsamic vinegar

1 tbsp olive oil

1 tsp honey

Salt and pepper, to taste

1 cup panko breadcrumbs

½ cup grated Parmesan cheese

2 tbsp unsalted butter, melted

Extra basil for garnish

Instructions

Preheat the Oven: Start by preheating your oven to 400°F (200°C) to ensure it's hot and ready for roasting.

Prepare the Tomato Mixture: In a spacious mixing bowl, combine the halved heirloom tomatoes and cherry tomatoes. Add the minced garlic and torn basil leaves for aromatic flavor. Drizzle in the balsamic vinegar and olive oil, then add the honey. Season the mixture generously with salt and pepper. Gently toss everything together until the tomatoes are well-coated and fragrant.

Roast the Tomatoes: Spread the seasoned tomato mixture in a single, even layer on a baking sheet. Roast in the preheated oven for about 20-25 minutes, or until the tomatoes are blistered, juicy, and infused with flavor.

Make the Crumble Topping: While the tomatoes are roasting, prepare the delicious crumble topping. In a separate bowl, combine the panko breadcrumbs and grated Parmesan cheese. Pour in the melted butter and mix well until the breadcrumbs are fully coated and the mixture is crumbly and ready to crisp up.

Combine and Finish: Once the tomatoes are roasted to perfection, carefully remove them from the oven and transfer them to a serving dish. Tear the burrata cheese into bite-sized pieces and scatter it generously over the warm tomatoes. Evenly sprinkle the prepared panko mixture on top of the burrata.

Final Bake: Place the dish back in the oven and bake for an additional 10-12 minutes, or until the topping is golden brown and crispy, creating a delightful contrast to the creamy burrata.

Serve: Once achieved the perfect golden crust, remove the dish from the oven. Garnish with additional fresh basil leaves for a pop of color and fresh flavor. Serve warm as a delectable starter, flavorful side dish, or a light and satisfying meal.

Presentation Tips: For an attractive presentation, consider serving the dish in a rustic ceramic baking dish and drizzle a bit of extra balsamic reduction over the top just before serving. This will enhance both the flavor and visual appeal! Enjoy this delightful combination!
