Ingredients

8 oz rice noodles

1 lb beef sirloin, thinly sliced

1 red bell pepper, sliced into strips

1 yellow bell pepper, sliced into strips

1 cup broccoli florets

1 cup snap peas

3 cloves garlic, minced

1 thumb-sized piece of ginger, grated

3 tbsp soy sauce

2 tbsp oyster sauce

1 tbsp sesame oil

1 tbsp vegetable oil

1 tsp cornstarch mixed with 2 tbsp water (for thickening)

Sesame seeds for garnish

Chopped green onions for garnish

Salt and pepper to taste

Instructions

Prepare the Rice Noodles: Bring a large pot of water to a boil. Once boiling, add the rice noodles and cook according to the package instructions until they are tender but still firm to the bite. Drain the noodles and rinse them under cold water to halt the cooking process. Set aside for later use.

Marinate the Beef: In a medium bowl, combine the sliced beef with soy sauce, sesame oil, and a pinch of salt and pepper. Mix well to ensure the beef is thoroughly coated. Allow the mixture to marinate for at least 15 minutes while you prep the vegetables.

Stir-Fry the Veggies: Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat. Add the minced garlic and grated ginger, and sauté for about 30 seconds until fragrant and the garlic is lightly golden.

Add the Vegetables: Add the sliced red and yellow bell peppers, broccoli florets, and snap peas to the wok. Stir-fry for approximately 3-4 minutes, or until the vegetables are bright in color and just tender yet still crisp. Once done, remove the vegetables from the pan and set them aside.

Cook the Beef: In the same wok, increase the heat to high and add a bit more oil if necessary. Once hot, add the marinated beef in a single layer. Stir frequently, cooking for about 3-5 minutes until the beef is well browned and cooked through.

Combine the Ingredients: Return the sautéed vegetables back into the wok with the beef. Pour in the oyster sauce and the cornstarch-water mixture. Toss everything together to ensure even coating. Cook for an additional 1-2 minutes until the dish is heated throughout and the sauce has thickened slightly.

Mix with Noodles: Gently incorporate the cooked rice noodles into the wok, carefully tossing everything until the noodles are well coated in sauce and mixed with the beef and vegetables. Taste and adjust seasoning with more salt and pepper if needed.

Serve and Garnish: Serve the sizzling stir-fry hot, garnished with a sprinkle of sesame seeds and freshly chopped green onions for an added crunch and flavor.
