BBQ Chicken Sweet Potato Bites

2 large sweet potatoes, peeled and cut into 1-inch cubes

2 cups cooked shredded chicken (preferably from a rotisserie)

1 cup barbecue sauce (use your favorite brand or try homemade)

1 tablespoon extra virgin olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

1/2 teaspoon kosher salt

1/2 teaspoon freshly ground black pepper

1/2 cup shredded sharp cheddar cheese

2 green onions, thinly sliced, for topping

Fresh cilantro leaves, for garnish (optional)

Instructions
 

Preheat the Oven: Set the oven temperature to 425°F (220°C) so it’s nice and hot when you're ready to roast the sweet potatoes.

    Prepare the Sweet Potatoes: In a large mixing bowl, combine the cubed sweet potatoes with olive oil. Add the garlic powder, smoked paprika, salt, and black pepper. Toss everything together until the sweet potato cubes are evenly coated in the seasoning mixture. Spread them out in a single layer on a parchment-lined baking sheet.

      Roast the Sweet Potatoes: Place the baking sheet in the preheated oven and roast the sweet potatoes for 25-30 minutes, or until they are fork-tender and have a golden caramelization. Remember to stir them halfway through roasting to ensure they cook evenly.
