Salt and freshly cracked black pepper, to taste

1 cup cherry tomatoes, halved

1 cup fresh spinach leaves, washed and dried

1/2 cup feta cheese, crumbled (or vegan feta for a dairy-free option)

1/4 cup fresh basil, chopped

1/4 cup pine nuts, toasted (optional)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a rolling boil. Add the pasta and cook according to the package instructions until al dente. Once cooked, reserve 1/2 cup of the pasta cooking water, then drain the pasta and let it cool slightly.
