2 boneless, skinless chicken breasts

2 ripe peaches, pitted and sliced into wedges

4 cups of mixed greens (a combination of arugula, spinach, and baby kale is recommended)

1/2 cup crumbled feta cheese

1/4 cup walnuts, toasted and coarsely chopped

1/4 cup balsamic vinegar

2 tablespoons extra-virgin olive oil

1 teaspoon honey

Salt and freshly ground black pepper, to taste

Fresh basil leaves, for garnish (optional)

Prepare the Chicken: Start by seasoning both sides of the chicken breasts with salt and freshly ground black pepper. Heat 1 tablespoon of olive oil in a skillet over medium heat. Once hot, add the seasoned chicken breasts. Cook for about 6-7 minutes on each side or until the chicken is cooked through and the juices run clear.
